A simple divine cake in a rice cooker.

Today I baked a warm light sponge cake in an electric rice cooker.

1/4 cup coconut oil
2 cup sugar
3 eggs
2 cups flour
1 tablespoon cardamom
1 Lemons full zest
2 table spoon Lemons juice
Cashew nuts, almonds, raisins
Coconut dried powder
Philips Rice cooker HD4711.

Just mix the oil and sugar first.
Add the eggs and beat slow.
Add the flour beat slow.
Add the dried powdered Coconut.
Add the powdered cardamom.
Add the full Lemon zest skin without the white parts.
Add the 2 tablespoon lemon juice.

Pour over the oil coated and flour dusted baking bowl.
Add the dried fruits and nuts.on top.

Bake for 45 minutes or 30 minutes in a Philips Rice cooker HD4711 rice cooker or any electric rice cooker.

After the baking out popped a fresh fragrant pineapple colored cake!
